And thanks for sharing those recipes, Shlee! I’ve been making soups but for some reason keep forgetting about stew XD; Also made this pumpkin chilli recently, with some changes, and it was delicious (used ground turkey instead of sausaage, added more peppers and some carrots, only used black beans because I didn’t have kidney beans)

I’ve also been making these muffins a lot lately, with more changes to make them pumpkin instead of banana XD I replace the mashed banana with pumpkin, reduce the sugar a bit, and add cinnamon and pumpkin spice:

Since Sushi is sharing, I'll just post mine here too.
Chocolate Chip Pumpkin Bread
3 1/3 cups of AP flour
3 cups sugar
4 eggs
1 cup oil
2/3 cups water
3 tsp cinnamon
2 tsp nutmeg
2 tsp baking soda
1 16oz pumpkin
12oz bag of chocolate chips
1/2 tsp salt
cream sugar and eggs. ADD oil, water, salt, and pumpkin. MIX WELL.
Mix dry ingredients together in a separate bowl. Add to pumpkin mix. Add chips.
Bake 325 for 1 hour.
Yield 2 big loaves or 4 foil pan loaves.
I sometimes like to use milk chocolate chips or the mini chips instead of your standard bag of semi-sweet chips.
